Dinnertime Hamburger Casserole

Dinnertime! Fond memories of hearing those words and running into the dining room to be greeted by a comforting aroma of savory goodness in the oven will have you feeling like a kid again in no time.

You’ll need:

1 lb. hamburger
Butter (see instructions)
1 picnic size can condensed tomato soup (that’s a 10¾ oz. can)
2 cups sliced potatoes
½ cup chopped onions
1 cup diced cheese
½ tsp. salt
½ tsp. pepper

Cook meat in a skillet until just tan. If using lean meat (under 20% fat), add 1 Tbsp. butter to the skillet before cooking; if using extra lean (less than 15% fat), add 2 Tbsp butter.

If using higher fat meat (25% fat or more), drain some but not all of the rendered fat from the skillet; otherwise, do not drain. Combine meat with the remaining ingredients in a greased deep 9×13 inch casserole dish and mix well. Cover casserole dish with foil; bake in a slow moderate oven (that’s 325° F) for 1 hour and 10 minutes. Let stand covered for five minutes; mix again well. Serves four to six.
