Adapted from a 1969 recipe from Favorite Recipes of Assemblies of God Women, this dish is exceedingly simple but nonetheless enjoyable. Cookbooks like these church women’s recipe collections give a window into what was actually served on the dinner tables of ordinary households, such as that of Mrs. Frank Giberson, whose recipe was published in that collection.

You’ll need:
1 cup uncooked macaroni
2 cubs cooked ham, cubed or chopped
8 slices American cheese
Salt and pepper to taste
1½ cup milk, or enough to almost cover (see instructions)
Paprika (optional)
Cook macaroni according to package instructions; drain. Thoroughly stir in salt, pepper, and ham. Spoon half of the mixture into a 1½ quart casserole dish; cover the layer with half of the American cheese. Add the remainder of the ham mixture, and top with the remaining cheese. Add milk to almost cover; sprinkle with paprika.
Bake uncovered in a moderate oven (that’s 350° F) for 30-35 minutes. Serves four.
