From my pantry to your table, hosting friends and family, preserving the Old Ways in my kitchen, this ultimate kitchen-staple meal is sure to please.
You’ll need:
5 medium potatoes, sliced ¼ inch thick
2 small onions, finely chopped (or diced, or sliced, if you prefer)
1½ cup cubed chicken, cooked
4 Tbsp. butter
4 Tbsp. flour
Salt, to taste
Pepper, to taste
2½ cups milk
Alternate layers of potatoes, onions, chicken, dots of butter, salt, pepper, and flour until all ingredients are used. Finish with a top layer of flour and dots of butter. Add milk to nearly cover potatoes.
Cover; bake in a slow moderate oven (that’s 325° F) for 75 minutes or until potatoes are tender.
