Smokey Mac & Cheese Pasta

Though this recipe didn’t technically come from the good old days, preparing recipes found in or on food packaging is definitely a vintage experience. This delight from the back of Knorr Chicken Flavor Pasta Sides a few years ago employs some old-style cooking skills and will generate a fitting number of dishes to wash. And boy oh boy, is it delicious.

You’ll need:

2 slices thick cut bacon, coarsely chopped
1 cup chopped red bell pepper
1 cup finely chopped yellow onion
1 package Knorr Chicken Flavored Pasta Sides
2 cups cooked bite-sized chicken breast chunks
½ cup pepper jack or cheddar cheese, shredded

Cook bacon in a medium saucepan over medium-high heat, stirring occasionally until crisp, typically 4 to 5 minutes. Stir red pepper and onion into the saucepan and sauté until crisp-tender, about 3 to 5 minutes. Remove from saucepan and set aside. (I cooked the bacon, pepper and onion in an iron skillet, but never mind.)

Prepare Knorr Chicken Flavored Pasta Sides in the same saucepan according to package directions. Stir in chicken, cheese, and the sauteed bacon, onion and pepper during the last 2 minutes of cooking time. (My ad-lib: you may want to simmer the combination gently for 5 more minutes instead of 2, to ensure that the chicken is hot through and through.)
