Easy Hamburger Casserole

Fond memories of dinners as a child! Mild, simple and kid pleasing, this tasty, filling dish is as much fun to make as it is to eat. Just like Jiffy-Pop.

For the ground beef, I used home-ground sirloin which provided a wonderful uniform texture, but if using ground beef of more than 20% fat, consider draining off some of the rendered fat before adding ingredients per the recipe.

You’ll need:

2 lbs. ground beef
1 tsp. celery seed
1½ cups onion, finely chopped
1 No. ¼ jar (4 oz.) diced pimientos (or ½ green pepper, finely chopped)
Salt and pepper to taste
2 Picnic size cans condensed tomato soup (that’s two 10¾ oz. cans)
¼ tsp. Worcestershire sauce
1 cup grated cheddar cheese
8 oz. noodles or pasta (uncooked weight)

Cook noodles according to package directions. Brown meat; add onion, pimientos (or green pepper), celery seed, salt, and pepper. Sauté together for 3 to 5 minutes. Add tomato soup, noodles and Worcestershire sauce; stir while heating until soup and noodles are evenly blended into the meat mixture.

Pour into large (9″x14″) casserole dish; top with grated cheese. Cover with foil; bake in a slow moderate oven (325° F) for 45 minutes. Remove foil for the last 15 minutes of baking.
